Jaggery — known as Gur in Hindi and Gul in Marathi — is an ancient, unrefined whole-cane sweetener that has been part of Indian food culture for over 3,000 years. Unlike refined white sugar, which undergoes heavy processing that strips away all nutrients, jaggery retains the complete nutritional profile of sugarcane.

At Panchmandal, our jaggery is made from organically grown sugarcane on mandala-patterned, bio-dynamic farmlands. The cane is crushed, the juice is boiled slowly in iron kadhai pans, and solidified without any synthetic clarifying agents, bleaching chemicals, or preservatives. The result is a rich, amber-golden jaggery with complex caramel-molasses notes — earthy, deep, and wholesome.
